The Locanda Il Fornacino It's the group's first restaurant. Sardegna & Toscana, a project born from travel and the encounter between two cultures. Its story is intertwined with that of the group: the fire of the Guazzino kilns, which gave roots to the town, unites with the wind and flavors of Sardinia brought by Alessandro Sau.
Just like the Transhumance, which, over centuries, has united shepherds, lands, and communities, the Inn is a bridge between two different but complementary identities.
The group's name was born during a trip to Florence, a moment of reflection during which Alessandro and Mirela imagined a path that would unite the solidity of Sardinia with the hospitality of Tuscany.
From here, the Inn becomes not just a fish and land restaurant, but a symbol of a journey made of memories, influences, and the future: a place where every dish tells a story and every guest rediscovers the warmth of feeling at home.
In the 1960s, transhumance led men, knowledge, and flavors to move from one land to another. Today, at Locanda Il Fornacino, that movement lives again in the kitchen: We bring the soul of Sardinia to Tuscany, without ever giving up dialogue with local tradition.
We are not a Sardinian restaurant in Tuscany., even though some dishes tell the story of our island of origin. Our philosophy is different: to build a bridge between two gastronomic cultures that complement each other.
On one side, the sea and the raw ingredients that arrive fresh from Porto Santo Stefano. On the other, meat from the Valdichiana region with certified Chianina, venison, and the best selections cooked over coals.
